Paul Travis is the head chef at Paulos and Dinkel’s restaurants. Paul has worked at Paulos and Dinkel’s for 22 years but he hardly looks old enough. He started his career as a dishwasher and worked his way up. Paul has lived in Belleville all his life. He is an avid ATVer and motocross rider.
Paulos and Dinkel’s restaurants are side by side on Bridge St. East in downtown Belleville. They are celebrating their 40th anniversary this year. Paul Dinkel is the owner and has been a big contributor to the downtown historic revitalization over the years. Paul is originally from Switzerland (I always thought he was Italian!). In 1966, after completing schooling and an apprenticeship as a pastry chef in Switzerland Paul came to Canada to work for the Four Seasons Inn on the Park Toronto. In 1978 he moved to Quinte Region and bought the two restaurants and the rest is history!
